The expression combines Papalote (Agave cupreata), Espadn (Agave angustifolia), and Tobal (Agave potatorum). The agaves are cooked in a conical underground brick pit oven fueled with encino and tepeguaje wood, then milled with a mechanical shredder. Wild fermentation takes place in open pine vats without added yeast
